Taro Mooncake

Ingredients:
2 1/2 cups taro, peeled and diced
1/4 cup sugar
2 tablespoons unsalted butter
1/4 cup glutinous rice flour
1/4 cup wheat starch
2 tablespoons powdered sugar
1/4 cup vegetable oil
1/4 cup water
6 salted egg yolks (optional)

Cooking Instructions:
- Steam the diced taro until soft, then mash it into a smooth paste while still hot.
- In a pan, melt the unsalted butter and add the mashed taro paste along with the sugar. Cook over low heat until well combined and the mixture thickens slightly. Remove from heat and let it cool.
- In a separate bowl, mix together the glutinous rice flour, wheat starch, and powdered sugar.
- Gradually add vegetable oil and water to the flour mixture, stirring until a smooth dough forms.
- Divide the dough and taro filling into equal portions, depending on the number of mooncakes you want to make.
- Flatten a portion of the dough into a round disc and place a portion of the taro filling in the center. If using salted egg yolks, wrap each yolk with taro filling before enclosing it in the dough.
- Carefully seal the edges of the dough around the filling, shaping it into a ball.
- Lightly dust a mooncake mold with glutinous rice flour and place the filled dough ball into the mold. Press firmly to imprint the design on the surface of the mooncake.
- Repeat the process with the remaining dough and filling.
- Preheat the oven to 350°F (180°C).
- Place the filled mooncakes on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until the mooncakes turn golden brown.
- Remove from the oven and let the mooncakes cool completely before serving.
- Once cooled, store the taro mooncakes in an airtight container at room temperature for up to 3-5 days.
